Guacamole 101

Guacamole is a dish that lends itself to experimentation. Creamy, mild avocados are a perfect blank canvas for flavor, and our obsession with them just keeps growing. (Last year alone, the average American consumed about 7 pounds of avocados!)

I have fond memories of living in Mexico, eating plain sliced avocados from the neighbor’s yard on tortillas with a little salt. In the years since I’ve enjoyed avocados every which way —plain, salted, mashed, baked— but I’m a bit of a purist when it comes to my guacamole. No fancy fixings; I prefer it classic, simple and sharp.

This simple guacamole is a wonderful starting point for any avocado aficionado. Once you’ve mastered the basic recipe, let loose (with cumin? mango?) and may the deities of dip take you where they will.

classic guacamole

  • 3 ripe avocados

  • 1 tomato, diced

  • 1-2 tablespoons diced white onion

  • 1 tablespoons chopped cilantro

  • Juice of half a lime

  • 3/4 teaspoon kosher salt

  • Dash of pepper

Directions

  • Cut avocados in half and remove pits. In a medium bowl, mash the avocados, leaving the mixture slightly chunky.
  • Stir in tomatoes, onions, cilantro, lime, salt and pepper.
  • Serve with your favorite tortilla chips.

START TO FINISH: 15 MINUTES. SERVES 6-8.
