Breakfast Casserole

This hassle-free Breakfast Casserole has been a family favorite for several years running. In our house, the weeks leading up to Christmas are a very fun-tilled (and very busy!) time. This year, we’ve already prepared 200 tamales for the big day.

By Christmas morning, we’re all ready for something comforting, delicious and easy. Make this the night before and store in the fridge for an easy morning meal on the big day, or any day.

Hassle-free breakfast casserole

  • 1 pound of your favorite ground sausage

  • 3 slices of white bread, cut into cubes

  • 3 eggs

  • 1/2 teaspoon salt

  • 1 cup shredded cheddar cheese

  • 1 cup milk

  • 1/2 teaspoon dry mustard

  • 1/4 cup chopped mushrooms

  • 1/4 cup diced green peppers

  • 2-3 tablespoons chopped green onion to top (optional)

Directions

  • Brown sausage and drain.
  • Layer bread pieces in a greased casserole dish (small oval 1 quart or similar).
  • Sprinkle sausage over bread then add cheese.
  • In a separate bowl, beat together eggs, and add the rest of the ingredients. Pour over cheese, sausage, bread and cover. Refrigerate overnight.
  • Bake at 325 degrees for 45 minutes.
