This hassle-free Breakfast Casserole has been a family favorite for several years running. In our house, the weeks leading up to Christmas are a fun-filled (and very busy!) time. This year, we’ve already prepared 200 tamales for the big day. It’s a wonderful family tradition, but even dedicated family chefs need a little kitchen vacation now and then.
By Christmas morning, we’re all ready for something comforting, delicious and easy. This hearty Breakfast Casserole is the perfect gift for our big, hungry family! Make this the night before and store in the fridge for a no-fuss morning meal on the big day — or any day.
Ingredients
1 pound of your favorite ground sausage
3 slices of white bread, cut into cubes
1 cup shredded cheddar cheese
3 eggs
1/2 teaspoon salt
1 cup milk
1/2 teaspoon dry mustard
1/4 cup chopped mushrooms
1/4 cup diced green peppers
2-3 tablespoons chopped green onion to top (optional)
Directions
- In a medium pan, over medium-high heat, brown the sausage and drain the extra fat.
- Layer the bread pieces in a greased one-quart oval casserole dish (or similar size).
- Sprinkle the sausage over the bread, then add the cheese.
- In a bowl, beat together the eggs, and add the rest of the ingredients. Pour the mixture into the casserole dish and cover. Refrigerate overnight.
- Bake at 325° F for 45 minutes, and serve warm.
