When it comes to childhood milestones I like to think outside the box. Watching my kids take their first steps was lovely, really. But seeing them in hysterics when Biff ploughs his car into the manure truck in “Back to the Future”?! These are the moments that make parenting worth it.
In homage to some of the all-time great comic films of my youth, ‘80s movie nights have become a ritual at home. “Big,” “Brewster’s Millions,” “The Goonies,” “The Princess Bride” — the possibilities for intellectual expansion are endless.
Luckily, movie snacks have remained consistently awesome over the years, and nothing says movies in America quite like popcorn. Given how inseparable the two have become, it’s hard to believe that in the early days of pictures, popcorn was outright banned. It didn’t officially break into theaters until the 1930s when films adopted sound, which theater owners were convinced would be enough to cover up all that unseemly munching.
For those of you who, like me, watch movies at home a whole lot more often than you make it to the theater, I applaud you and wish you well on your road to family laughs and delicious popcorn. But where we’re going we don’t need roads — just kernels and coconut oil.
Over the years, I’ve tried lots of different oils when making popcorn, and in my un-scientific opinion, coconut oil is the best. It produces a surprisingly light and fluffy popcorn with a hint of sweetness. Your kids are gonna love it.
CLASSIC POPCORN WITH COCONUT OIL
1/4 cup popcorn kernels
2 Tbs unrefined coconut oil (don’t use the triple-filtered stuff! We like Trader Joe’s Organic Virgin Coconut Oil)
salt to taste

- Lightly coat kernels with oil in a pot over stove. Cover and pop on high while shaking until last pop is heard. Salt to taste.
TOTAL TIME: 10 MINUTES. YIELDS 6 SERVINGS.
