Baked Plantain

Plantains, or cooking bananas, have been delighting palates since the days of Cleopatra. To eat a banana raw, in fact, is a particularly modern phenomenon. And as much as we love a mildly sweet, mutated modern banana, there is something earthy and magical about this ancient bitter fruit that transforms into rich sweet creaminess with the warm hug of an oven.

A baked plantain is easy, healthy comfort food, and it really does knock the socks off a baked potato. Enjoy it plain, or with butter and salt.

Ingredients

  • One very ripe plantain

  • Butter and kosher salt, optional

Directions

  • Make sure your plantain is ripe with lots of dark spots.
  • Cut off the ends and slice it lengthwise.
  • Wrap the plantain in foil and bake at 350° F for 40 minutes.
  • Let the plantain cool and then unwrap the foil. Enjoy plain, or with butter and salt.

START TO FINISH: 50 MINUTES. SERVES 1-2.
