Plantains, or cooking bananas, have been delighting palates since the days of Cleopatra. To eat a banana raw, in fact, is a particularly modern phenomenon. And as much as we love a mildly sweet, mutated modern banana, there is something earthy and magical about this ancient bitter fruit that transforms into rich sweet creaminess with the warm hug of an oven.
A baked plantain is easy, healthy comfort food, and it really does knock the socks off a baked potato. Enjoy it plain, or with butter and salt.
Directions
- Make sure your plantain is ripe with lots of dark spots.
- Cut off the ends and slice it lengthwise.
- Wrap the plantain in foil and bake at 350° F for 40 minutes.
- Let the plantain cool and then unwrap the foil. Enjoy plain, or with butter and salt.
